LIBRARIAN'S VERDICT

An acquired taste that becomes an obsession. There is no other spirit like it on earth—it is liquid history and umami.

The Library Note

Produced in the town of Maotai in Guizhou province. It is made from red sorghum and fermented in stone pits. The production process is ancient and labor-intensive, taking a full year, followed by at least 3 years of aging. It is the drink of diplomacy in China.

THE NOSE

Explosive and savory. Soy sauce, ripe pear, toasted nuts, and blue cheese.

THE PALATE

Intense and fiery yet smooth. Umami bomb with notes of mushroom, cacao, and fermentation.
