For years, Caol Ila was the workhorse for blends like Johnnie Walker. Now recognized as a single malt star, it offers a different take on peat: grassy, olive-oil like, and clean, rather than the heavy medicinal punch of its southern neighbors (Laphroaig/Lagavulin).
