LIBRARIAN'S VERDICT

A liquid time capsule. The use of wooden stills gives El Dorado a weight and a 'soul' that modern column stills simply cannot replicate. It is the definitive 'dessert' rum for the serious connoisseur.

The Library Note

Produced by Demerara Distillers, El Dorado 12 is a blend of aged rums from three iconic stills: the Enmore wooden Coffey still, the Port Mourant wooden pot still, and the Diamond metal Coffey still. These relics of the 18th and 19th centuries create a spirit that is unmatchable in its density and heritage.

Sommelier's Perspective

THE NOSE

Deep and gourmand. Explosive aromas of stewed apricots, dark caramel, and a sophisticated woody vanilla.

THE PALATE

Lush and velvety. Layers of honey, tobacco, and dark chocolate are balanced by a heavy, syrupy fruitiness and baking spices.

THE FINISH

Exceedingly long and warming with a final flourish of orange peel and toasted almonds.

THE PERFECT SERVE

Sipped neat from a snifter. The heavy notes from the wooden stills are best appreciated at room temperature, allowing the complex 'funk' of the Demerara spirit to fully reveal itself.
