The Library Note
George Dickel famously insisted that his whisky was as good as any Scotch, hence the spelling without the 'e'. His secret was filtering the spirit only in the winter, believing the cold temperatures made the charcoal more effective. Today, they chill their spirit to 40°F before filtration to honor his legacy.
