The Library Note
Originally smuggled by founder John Rexer into his bar in Antigua, Guatemala, Ilegal was born from a desire for a mezcal that wasn't overwhelmingly smoky. Produced in small batches in the Santiago Matatlán region, it prioritizes the sweet, honeyed flavor of the agave over the intense charcoal notes of Industrial mezcals.

The 'Ilegal Paloma': 2 oz Ilegal Joven, top with grapefruit soda and a lime squeeze. The mezcal's light smoke adds a sophisticated layer to the classic grapefruit profile without making it 'medicinal.'
