LIBRARIAN'S VERDICT

The original. It set the template for the Aussie style: big, oily, and full of flavor thanks to the small casks. It feels handmade.

The Library Note

Bill Lark realized that Tasmania had excellent barley, water, and peat—yet nobody was making whisky. He changed the laws to allow small stills and founded the industry. The Classic Cask is a marriage of small casks, heavily influenced by local peat and port barrels.

Sommelier's Perspective

Golden syrup, vanilla, and stewed fruits.

THE PALATE

Butterscotch and citrus. The peat is a subtle, earthy background note rather than a smoke bomb.

THE FINISH

Warming and sweet.
