The Library Note

Founded in 1835 by Manuel María González, who named the solera after his uncle ('Tio') Pepe. It is aged under a protective layer of yeast known as 'flor', which prevents oxidation and keeps the wine pale and incredibly fresh. It is the absolute icon of Spanish aperitif culture.
