The Library Note
In 1868, the Benedictine monks of San Spirito Abbey in Caltanissetta gifted their secret recipe to their benefactor, Salvatore Averna. It became the official supplier to the Italian royal household. Unlike the sharp alpine amaros of the north, Averna reflects the warmth of the south, full of citrus and sweetness.
THE PERFECT SERVE
The 'Black Manhattan': 2 oz Rye Whiskey, 1 oz Averna, 1 dash Angostura bitters. The Averna replaces the vermouth, adding a dark, caramel depth that transforms the drink.
Composition
EXPERT TECHNIQUE
Infusion of Mediterranean herbs, roots, and citrus rinds (including Sicilian lemon and pomegranate) in neutral spirit, blended with caramel.
