The Library Note
Francis Darroze was a chef who began hunting for the best single-estate barrels in Gascony to serve in his restaurant. He became known as the 'Pope of Armagnac.' Unlike big Cognac houses that blend for consistency, Darroze celebrates the unique character of small growers and the specific terroir of the Bas-Armagnac sand.
THE PERFECT SERVE
Neat after a heavy meal. Armagnac is the ultimate digestive, capable of cutting through rich fats (like Duck Confit).
