LIBRARIAN'S VERDICT

The king of the dark rums. It manages to be unashamedly bold and syrupy while maintaining a spiced complexity that makes it an indispensable tool for tropical and high-intensity cocktails.

The Library Note

Produced in Bermuda since 1806, the name 'Black Seal' comes from the black wax used to seal the original bottles (which were repurposed champagne bottles). It is the only rum that can officially be used in a 'Dark 'n Stormy'—a cocktail so iconic that the name is actually trademarked by the Gosling family.

Sommelier's Perspective

THE NOSE

Intensely sweet and dark. Strong notes of rich molasses, fruitcake, and a savory hint of jerk spices like allspice and clove.

THE PALATE

Balanced and thick. Flavors of gingerbread, black licorice, and stewed dark fruits are underpinned by a deep, caramelized sugar richness.

THE FINISH

Crisp and tingling with a lingering warmth of gingerbread and dark cocoa.

THE PERFECT SERVE

The 'Official Dark 'n Stormy': 2 oz Goslings Black Seal, top with spicy ginger beer (ideally Goslings brand), and a squeeze of lime. The rum's dense molasses notes are the only ones strong enough to stand up to the heat of the ginger.

Composition

Sugar Cane
Molasses
Water

EXPERT TECHNIQUE

A blend of triple pot-distilled rums, aged for 3 to 6 years in re-charred American oak barrels that once held bourbon.
