LIBRARIAN'S VERDICT

The king of the XO category. While many XOs rely on wood, Rémy rely on fruit and flowers. It is arguably the most complex spirit available on the commercial market.

The Library Note

Created in 1981 by Cellar Master André Giraud, this XO is the signature of the House of Rémy Martin. It consists entirely of eaux-de-vie from the Grande Champagne and Petite Champagne crus, the finest in the Cognac region. Its iconic decanter and deep mahogany color are signs of a spirit of extreme prestige.

Sommelier's Perspective

THE NOSE

Exceptionally broad and aromatic. Intoxicating scents of jasmine, iris, and candied orange, followed by ripe plum and hazelnut.

THE PALATE

Velvet in liquid form. An explosion of flavors including honey, dried apricot, and cinnamon, with a spicy, floral depth.

THE FINISH

Infinite. A lingering, warm glow of spice and fruit that evolves for minutes on the palate.

THE PERFECT SERVE

Neat or on the rocks. When served over a single large block of clear ice, the spirit's floral notes 'bloom,' revealing a hidden layer of spring blossom complexity.
