Named after Mt. Hakkai, this brewery represents the Niigata style: clean, dry, and cold. The snow is used to naturally refrigerate the fermentation tanks. It is often described as 'Tanrei Karakuchi' (crisp and dry), designed not to overpower food but to cleanse the palate.
